Pumpkin Bread

I've been making this a lot lately. It's so yummy, especially when you add chocolate chips to the batter.

1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
chocolate chips, optional

Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans. *I use two standard bread loaf pans (not sure the measurements) and cook about 60 minutes.*

In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

I have four pumpkins we didn't get around to carving, so I think I'll be making this bread. The problem is if I make it, I'll probably end up eating it all. *sigh*

I made this yesterday and it was really good! I think I will make 5 more loaves to take to pack meeting this month. I am incharge of the snack.

I also made some yesterday (but not the same yesterday as Mical), and it was YUMMY! Sevrie helped me make it, and we gave a loaf to a neighbor. The wonderful thing about this bread (or pumpkin bread in general) is that lots of kids actually like it!

Sevrie is a very olfactory sensitive child, and as we made the bread I would have her smell each spice before we put it in. She did NOT like the smell of nutmeg, cloves, or ginger, but she DID like the smell of cinnamon!

It's hard for me to not get OCD about the mess, but it was a fun opportunity to teach her about the smells AND how to measure ingredients.

Besides the flavor... what I like about this bread is how easily it comes out of the pans!

Making this today...again! Made it alot when we lived in Washington since it was always cold...but I am having a fall craving when it is 100+ out :)
